In creating the new cafe and restaurant in the Crypt at St Paul's Cathedral, we worked closely with the Surveyor of the Fabric and the Clerk of Works to the Cathedral on the remodeling of the existing spaces of this Grade I listed building. A new mezzanine level was created which harmonised the various levels of the existing structure, and a screen was set up to separate the open kitchen from the restaurant seating area. Oak furniture, rush and tweed upholstery and C17 replica artworks were carefully chosen to emphasize the Best of British theme.
