Set in Folkestone Harbour, commissioned by local philanthropists Sir Roger and Josh De Haan, the Rocksalt project posed a key question: not whether Hollaway Studio could design and build a high-end fish restaurant, but rather if it would do anything for local people. A strikingly contemporary building, taking design cues from the harbour itself, Rocksalt Restaurant & Bar seeks to involve all, its eye not on itself, but on how it fits with, contributes to, and helps shape plans for wider development, Rocksalt is one of the country’s most successful open-ended architectural conversations – with the very local.
