Ninefold Distillery: Situated on the Dormont Estate near Dalton, Ninefold Distillery is the first and only rum distillery in the South of Scotland. Existing agricultural buildings were converted and refurbished; a stone built former dairy steading accommodates the distillery and a former barn accommodates the bond store. Significant work was involved in the refurbishment; the steading building was stripped back to only external walls which were repaired, and then new roof, floor and internal structure was formed. Due to the rural location the building and process plant services proved an interesting challenge. Our Client was keen to retain the character of the existing buildings and estate farm; external alterations were kept in character and historic stonework bearing the family coat of arms was incorporated into the design. While the business has started out as a craft distillery with a single Scottish-made copper pot still, the buildings have been designed to allow for future expansion.
